Patatnik

Patatnik is a typical Rhodope dish made from potatoes. In different areas, it goes by different names: patato or pateto, derived from the word for potatoes. Its preparation is not very complicated, but the skill lies in the baking. The main ingredients are grated potatoes, onions, salt, and mint. All are mixed and baked on very low heat like a large pancake or omelet. The tricky part is flipping the patatnik without deforming it.
